If you want to get started, you can download a cd-rom full of open source software (Win/Mac/Linux) over at NGO-in-a-box. Their Audio/Video-box has all the (free) tools you need to record, edit and publish your podcast or vodcast. The software that's offered on the cd-rom, can be downloaded separately is well. So no need to panic if you only need an audio editing tool.

Examples:

Podcasts of Human Rights Watch, Christian Aid, Carnegie Council for Ethics in International Affairs
